Grilled Cheese with Guacamole Sandwich

I go to a swim meet once a week. Swim meets are incredibly long; like four hours long. The host team always sells food in the form of either pizza, burgers, hot dogs, candy or cookies. Sometimes I am stubborn about what my food and I refuse to eat out of concession stands so I stand there for hours watching event after event, relays, butterfly, boys, girls, while I starve. Last week I stood at the edge of the pool dreaming with this combo of three of my favorite things: bread, cheese and avocados. It’s pretty decadent and filling and just plain good. Don’t need to save this for swim days only – eat any time, all the time!


Grilled Cheese with Guacamole Sandwich



To make guacamole:
  •  Two avocados (smashed)
  • Juice from one lime
  • Pinch of salt
  • One jalapeño (optional)
To make sandwiches:
  • Four slices of bread
  • One large tomato cut into slices
  • Four slices of cheese


  1. Make the guacamole by mixing all the ingredients in a small bowl.
  2. Spread the avocado on the bread and top with tomato slices and cheese.
  3. Cook in a panini maker, grill pan or frying pan – whatever tool you have access to.
