It is starting to get hotter than hot around here and it is making me crave more salads and less heavy winter-comfort foods. Summer brings lots of colorful vegetables to the markets and tomatoes are one of the highlights of the season. Alright alright so summer is not technically here yet but I am getting ahead of times with this super light and fresh salad. All you need to do it cut the tomatoes, toss them with some extra virgin olive oil and you are done. Of course here I am adding few more things to the mix but you don’t really have to. Make is as easy or complicated as you’d like. Replace feta cheese with goat cheese, add some grilled corn, olives anyone? Make this puppy your own!
Tomato, Avocado and Feta Summer Salad
- 1 large beef steak tomato, cut in slices, diced or any other size you preferred.
- 1 ounce Feta Cheese
- 1/2 avocado, diced.
- Salt, freshly grounded pepper and extra virgin olive olive.
- Toss all the ingredients together. Enjoy!
